Cheese is generally fatty and acidic, two structural components that work well with most wine, as a wine’s acidity will balance with a cheese’s acidity, cutting through the fat. Tannins in a red wine will be softened whilst acidity in white wine will become rounder and smoother. A dessert wine will off-set the saltiness of cheese, elevating sweetness in the wine whilst making the cheese taste more intense.
