Harvested very early in the season to keep the purity of the Pinot Noir, the fruit is completely destemmed to soften its tannins. After a slow pressing, this wine is fermented 100% in thermoregulated stainless-steel tanks at low temperature to let fruity aromas of the terroir express themselves. A maceration of 15 days maximum follows. This wine is then aged for 6 months in stainless steel tanks in order to preserve all its minerality.
